Rocky Road Brownies with mini Rolo’s
YES BROWNIES! These are as delicious as they sound and look. It all comes together fairly quickly, starting in one pot and adding the remaining items for the brownie bottom, and then baking. Add the topping, toast and cool. It is that easy.
These are versatile, and can be modified to your liking. You can change the nuts to pecans or peanuts, whichever you like. You can also change up the chocolate, you can use chocolate chips, or butterscotch chips or another popular chocolate bar you like that either comes in a mini version or you can chop it up.
The small amount of buttermilk can be substituted with 1/4 cup of milk and a teaspoon of vinegar, if you do not have buttermilk on hand.
Delicious chocolaty soft brownies, topped with nuts and marshmallows and yes mini rolos!
- 1/2 cup unsalted butter
- 1/2 cup unsweetened cocoa
- 1 cup sugar
- 1 egg
- 1/2 cup unbleached all purpose flour
- 1/4 cup buttermilk
- 1 tsp vanilla
- 1 cup miniature marshmallows
- 1 cup miniature rolo pieces
Preheat oven to 350 F.
Lightly grease an 8 inch square pan.
Combine butter and cocoa in a medium sized saucepan, and heat over low heat, stirring constantly until smooth. Remove from heat and whisk in sugar, egg, flour, buttermilk and vanilla. Mix until smooth.
Pour batter evenly into prepared pan. Bake for 25 minutes, check with a toothpick as soon as the centre is dry. Do not over bake.
Remove from oven and sprinkle with marshmallows, walnuts and rolo pieces. Return to oven for 3-5 minutes, until it starts to meld together. You may want to broil for a minute, tops, to get that golden brown. Careful not to burn it.
Cool in the baking pan on a wire rack. Once cool, cut into 2 inch squares.
